Food and Cooking in the Middle East and North Africa

This article focuses on the Swedish context of upper and post-upper secondary education provided in two sectors, universities and the Swedish Folk High School. The article is centred on the analysis of the support services offered by fifty-five university and Swedish Folk High School institutional websites to individuals and groups designated as being ‘peripheral’. Taking as a point of departure a ‘practiced policies’ theoretical position, the study focuses on the ‘situated nature’ of institutional policies, that is, how policies become operationalised in local institutional contexts. Of interest is the nature of expectations placed on participants in the provision of support, and the ways in which different target groups are conceptualised and categorised. The findings of this national scale mapping, that build on two ongoing projects concerning equity and social justice, are discussed in terms of fundamental dimensions of democracy that shape students’ opportunities to access upper and post-upper secondary education.

Farming the Eastern German countryside in the animal welfare era

Abstract

Animal husbandry, a major part of the contemporary German economy, is the subject of politically and morally charged discourses about the effects of the industry on the nation's landscape and its role in economic globalization. German politicians and activists often discuss industrialized animal husbandry practices as abusive and polluting. This article analyzes how these debates are imbricated in forms of concern about nonhuman animals that tend to be differentiated geographically by urban-rural boundaries. I argue the privileging of animals as moral entities causes interpersonal friction between those who rely on animals for a living and those who do not, and expresses fundamental tensions about the rural landscape as a space of industrialized agricultural production, as opposed to a space dedicated to the conservation of the natural environment.

Gender, Curiosity, and the Grand Tour

Late-Eighteenth-Century British Travel Writing

Abstract

Discussions of eighteenth- and nineteenth-century European travel have long tended to over-apply the model of the grand tour. It is increasingly recognized now that many British journeys to the Continent knew different motivations and itineraries, and were made from different subject positions than that of the young male aristocrat. An alternative model proposed for female travelers has its own limitations, however. It presents women as more open-minded than men, with a greater eye for detail and keen to escape patriarchal confinement at home. Yet female travelers’ wish and capacity to offer an alternative to the grand-tourist gaze was limited. Still, travel, travel writing, and publishing offered women a chance to explore new social models and lifestyles and develop new forms of personal independence.

Using Bourdieu’s Theory of Practice, this study examines the practices of Swedish students when entering higher education. Logistic regression is used to examine relationships between the educational resources and geographical origins of students born 1973–1982 (N = 382,198) and 1) their probability of migration when entering higher education and 2) the type of institution they entered. The results indicate that students’ practices differ by geographical origin, suggesting that students use migration in different ways to access higher education. For example, the students with the highest probability of migration are students originating from rural areas with high upper-secondary grades and students from large urban areas with low grades. Implications for expanding access to higher education while also creating sustainable communities are discussed.

Rapports réels et pratiques entre la psychologie et la sociologie

Abstract

This article discusses the relationships between sociology and psychology through the dialogue between Georges Dumas and Marcel Mauss about the expression of emotions during the 1920s. Firstly, the aim is to show the affinities of their engagements concerning the disputes between human sciences and philosophy. Secondly, from an analysis of their trajectories, the aim is to show that the positions taken in the debates are associated with the positions psychologists and sociologists took inside the academic field from 1900 to 1930. Finally, the article aims to show that the dialogue between Mauss and Dumas reveals a process of sociologization of psychology rather than a psychologization of sociology, which has produced criticism from psychologists aiming to regain their lost position and from sociologists from the new generation aiming to overcome Durkheimian sociology.

Il s'agit de discuter les rapports entre la sociologie et la psychologie à travers le dialogue entre Georges Dumas et Marcel Mauss au long des années 1920 sur l'expression des émotions et des sentiments. Le but est d'abord de montrer les affinités entre leurs engagements concernant les combats des sciences de l'homme contre la philosophie. Ensuite, à partir d'une analyse de leurs trajectoires, d'argumenter que leurs prises de position dans ce débat sont associées aux positions que les psychologues et les sociologues ont occupées dans le champ académique entre les années 1900 et 1930. Finalement, il s'agira de montrer que le dialogue entre Mauss et Dumas révèle la sociologisation de la psychologie plutôt que la psychologisation de la sociologie, et que les critiques faites à ce dialogue par les psychologues visent à regagner de l'espace perdu, alors que celles des sociologues de la nouvelle génération visent plutôt à dépasser la sociologie durkheimienne qui inspire ce dialogue.

Abstract: In Iran, the northern province of Gilân displays a strong specificity, including the registers of food and cooking. The regional culinary style is characterised by five traits: the base is rice, with a predilection for green, acid, eggs and fish. Cooking methods are also original in the Iranian world: Gilân’s culinary culture is not about ovens or dry cooking or roasting, but about browning, simmering and steaming.

Résumé : En Iran, la province septentrionale du Gilân présente une forte spécificité, en particulier dans les domaines de l’alimentation et de la cuisine. Le style culinaire régional se caractérise par cinq traits : la base est le riz avec une prédilection, en accompagnement, pour le vert et l’acide, pour les oeufs et pour le poisson. Les techniques de cuisson présentent aussi une certaine originalité dans le monde iranien : au grillé et à la cuisson sèche, on préfère le mijoté, le revenu.

Abstract: In light of the recent surge of Iranians’ autobiographies and fictions in the West, this article will examine ‘food writing’ as an emerging genre of diasporic narrative dominated by Iranian women. It will explore the multiple avenues through which these cookbooks/food memoirs seek not only to make accessible the highly sophisticated Persian culinary tradition but also to ameliorate the image of Iran. Such attempts are partly in response to the challenges of exilic life, namely, the stereotypical portrayal of Iranians in the Western media. Three books with strong memoir components will be further discussed in order to demonstrate how the experiences of the 1979 revolution, displacement, and nostalgia for prerevolutionary Iran are interwoven with the presentation of Iranian food and home cooking abroad.

Résumé : À la lumière de la vague récente d’autobiographies et de fictions d’Iraniens dans l’ouest cet article examinera “l’écriture culinaire” en tant que genre émergent de récit diasporique dominé par les femmes iraniennes. Il explorera les multiples voies pas lesquelles ces livres de cuisine / mémoires culinaires cherchent non seulement à rendre accessible la tradition culinaire persane très sophistiquée, mais aussi à améliorer l’image de l’Iran. Une telle tentative est une réponse aux défis de la vie en exil, à savoir la représentation stéréotypée des Iraniens dans les médias occidentaux. Trois livres avec de fortes composantes de mémoire seront discutés plus en détail afin de démontrer comment les expériences de la révolution de 1979, le déplacement et la nostalgie de l’Iran pré-révolutionnaire sont entrelacés avec la présentation de la cuisine iranienne et de la cuisine maison à l’étranger.

Islam, Travel, and Learning

A Case Study on Indonesian Muslim Student Diasporas in Saudi Arabia

Abstract

This article focuses on the study of the relationship between Islam, travel, and learning by conducting a case study on Indonesian Muslim students who studied (or are studying) in Saudi Arabia. Specifically, it examines the changing dynamics of these students who traveled, immigrated to, and studied in Saudi Arabia in search of knowledge from previous centuries to the contemporary era. This article shows that Indonesian students in this peninsula are deeply plural and complex, far from being a monolithic group in terms of social background, religious affiliation, political orientation, major field of study, and motive of their study, among other factors. Thus, the present article aims at demystifying and challenging the common beliefs and narratives which hold that Saudi Arabia–trained Indonesian students have been exporters of Islamist intolerance, radicalism, or even terrorism.
