Encounters with traditional Buriat cuisine

Indigenous to Inner Asia, Buriats are a formerly nomadic people who now reside in southern Siberia, in the areas east and west of Lake Baikal. Although settled members of the Russian Federation, their traditional cuisine reflects their nomadic roots. Milk and meat products - from horses, cattle, sheep, and goats - are still the two main components of the Buriats' diet, supplemented by wild and cultivated plants (primarily hardy grains and root vegetables). Despite living within the dominant Russian culture, some Buriats still retain their shamanistic beliefs and make offerings to deities or spirits when drinking alcohol or eating certain foods. They have also preserved their ritual methods of slaughtering and butchering livestock, as well as traditional ways of processing the meat.

In Tim O’Brien’s The Nuclear Age the narrator, William Cowling, gazes out of his aeroplane window at a United States alight with nuclear explosions. In Don DeLillo’s End Zone nuclear war rapidly develops after a nuclear device explodes in Europe, and cities around the world are destroyed. In Douglas Coupland’s Generation X a supermarket erupts in panic as sirens wail, jets are scrambled and a nuclear missile explodes. The opening frames of the film Thirteen Days are lit by the explosions of rocket propellant as a missile rises gracefully into the blackness of space. The earth’s horizon is seen from the top of the missile’s arc, and inverts as it heads back downwards. A nuclear explosion follows, more missiles leaping into the air are intercut with further explosions, and the sequence ends with a mushroom cloud boiling up to fill the screen.

As a child in Romania, I would choose a word and repeat it over and over until it lost its meaning. The syllables would superimpose one another and sound like a foreign language, not invented yet or long ago abandoned, something mysterious and antique, rough and absurd. Instead of opening up and shining acoustically, the sounds choked like marine animals tossed in a boiling cauldron. The word would then become tangible, heavy, like a clay rock thrown in the ocean. I would then await its dissolution, would watch for its disappearance while continuing to repeat it, compulsively, unable to control the joy of my offence. What are words? I asked myself. Where do they come from and where do they go?
